1 cup fresh or frozen blueberries (antioxidant)
1/2 cup balsamic vinegar (antioxidant)
1 teaspoon pure honey (natural antioxidant sweetener)
1 small apple peeled and chopped (antioxidant)
2 tablespoons tomato paste (concentrated antioxidant)
1/2 small red onion, finely chopped (antioxidant)
2 cloves garlic, minced (anti-inflammatory + immune support)
1 tablespoon extra virgin olive oil (Omega-3 anti-inflammatory)
1 teaspoon smoked paprika (antioxidant)
1/4 teaspoon cayenne pepper (antioxidant) *add sparingly, a little goes a long way
1/4 teaspoon red pepper flakes (antioxidant) *add sparingly, a little goes a long way
1/4 teaspoon black pepper (helps nutrient absorption)
Pinch of sea salt
Optional: 1/2 teaspoon ground ginger or turmeric for extra anti-aging benefits
Preparation
Sauté aromatics: In a saucepan over medium heat, warm the olive oil. Add red onion and garlic. Cook until softened and fragrant, about 3–5 minutes.
Add the tomato paste and spices mix with the onions and garlic
Add the rest: Stir in blueberries, apple, balsamic vinegar, and honey. Bring to a gentle simmer.
Simmer down: Cook for 15–20 minutes, stirring occasionally, until the blueberries burst and the sauce begins to thicken.
Blend smooth (optional): Use an immersion blender or transfer to a blender for a smooth, thick texture.
Adjust consistency: If it’s too thin, simmer longer. If you want extra thickness without starch, mash some of the blueberries or reduce it longer uncovered.
Let cool completely. Store in a jar in the fridge for up to 7 days, or freeze for later.
